I love desserts and love baking them even more. However, I have been trying to tame my sweet tooth and stick with healthy eating over the past few weeks. When I came across this awesome blog, Chocolate Covered Katie, I knew I had to try these healthy desserts. I made her Chocolate Chip Peanut Butter Balls which came out perfect. It’s hard to feel guilty about these when they have about 60 calories in each.
For this week’s “At the Table” post we decided to focus on healthy (or at least healthier) desserts. As we move into Fall, I have been dusting off my pie pans and getting ready for my favorite baking season. So, I decided to whip up some of my favorite pies… but skip the crusts. This was the result – little, bite-sized versions of pumpkin pie, apple pie and a strawberry tart. For the pumpkin pie, I made a pumpkin pudding - hardly any sugar and no evaporated milk. Next, for the apple pie, I mixed Apple Pie Spice with some unsweetened natural applesauce. Then I topped it with slivered apples and baked it for 20 min. Finally for the strawberry tart, I spooned a bit of low-fat custard into a shot glass and topped it with fresh strawberries.
It’s fall which to me, means, APPLES!!!! Apple pie, apple cider, homemade applesauce! The best part- it keeps the doctor away!
So I made baked apples for my healthy dessert dish using cranberries, golden raisins, and dried apricots. I found the recipe here and loved all of the ingredients. Plus it made my apartment smell like Thanksgiving! Mmm! Quick, easy, and delicious. I also recommend using a tablespoon of Grand Marnier for flavor!
